OUR STORY

Von Ebert Brewing is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook.  Von Ebert Brewing was named after Tom S’ Great Grandmother Ebert, who was the guiding force to our immigrant family when they came over from Germany to the United States.  Through marriage, our last name is different now, but when we decided to build a craft brand, we knew we wanted to make Grandma proud and she continues to be our guiding force.  If Grandma Ebert wouldn’t think it was up to point, we won’t do it.

FOOD

 

We call our food cuisine; Elevated American Pub food and we strive to craft our beer to be inspirational.  If it doesn’t inspire us, then we don’t release it.  Our menu was 100% crafted by our internal employees using the culinary expertise of our prep cooks, line cooks, and managers.  We are extremely proud of the time and testing that went into the creation of our menu and hope you feel the same way.  We seat about 260 people inside and 40 people outside.  We make all of our sauces by hand (ok, we use an immersion blender) and believe that craft is not just a name for beer.

BEER

 

We brew on an American made, custom 10bbl brew house built by JVNW in Canby Oregon.  Most of our beer is poured directly from our brite tanks, which helps keep aroma in the beer.

 

We proudly do not have a filter, but still make very bright beer.  Typically, we make about 100 different styles per year and our draft list changes about every 3 or 4 days.

Tom S is one of the founders of Von Ebert Brewing and is responsible for the strategic vision, operations, marketing, real estate, and overall success of Von Ebert.  Tom S went to Purdue University’s Krannert School of Management where he holds a BS in Management with minors in Finance and Organizational Behavior and Human Resources.  Tom, Eric and Dennis provide strategic advice, assist in securing financing, and provide a unique growth perspective to Von Ebert.

 

Dom Iaderaia is our Director of Operations and is responsible for all restaurant operations as well as new site launches.  Dom attended the University of Michigan and Macomb Community College, where he fell in love with food!

 

Our General Manager of the Pearl location is Rachel McBride.  Rachel is responsible for the day to day operations of the restaurant side and holds a BA in Communications with a Minor in Science from the University of Pittsburgh.

Our Head Chef is Jackson Wyatt. Originally from Southern California, he came to Washington State via the US Air Force. After 6 years of service he moved to Portland and attended Western Culinary Institute. After working at several local restaurants including Southpark, Bridgeport Brewing and Castagna, he opened a top 100 beer bar, NWIPA, with Dan Huish. Recently he helped open the kitchen at Grains of Wrath in Camas with his wife, Fabiola Ponce Wyatt.

 

Our Pearl District location Head Brewer is Sam Pecoraro.  Sam has been brewing in Portland since 2011.  Sam graduated from Appalachian State University and the University of Dayton, giving him the rare distinction of being both a Mountaineer and a Flyer.
